I bought these lovely snowskin mooncakes from a veg outlet recently. This is the first time I have tried them and they're actually the non-bake version of the traditional mooncakes. This type of mooncake has a chewy crust which is made of glutinous rice and is served cold, hence the name "snowskin". The ones I bought have fillings of red bean paste, lotus paste, pandan paste and white lotus paste. I am told they're easier to make than the traditional ones, so if you're keen to give it a try, just Google for the recipes and you're on your way!
